Chipotle Chicken Wrap

We often skip the tomato and lettuce, and use cheddar cheese, depending what we have on hand.

  • 4 tablespoons chipotle mayonnaise
  • 4 flour tortillas
  • 1 cup cubed or shredded, cooked chicken
  • 1/2 cup black beans (drained and rinsed)
  • 1/2 cup corn
  • 1/4 cup cilantro (chopped)
  • 1 cup cooked rice (brown or white)
  • 1/2 cup diced tomato
  • 2 cups shredded lettuce
  • 1 cup shredded Mexican blended cheese


  • In a bowl, mix together chicken, beans, corn, cilantro, and rice
  • Spread 1 tablespoon of mayo on each of the tortillas
  • Top the tortillas with an equal portion of the mix, then top each portion with tomato, lettuce, and cheese
  • Roll up and serve
