Tip: Don’t over do it on the olive oil, otherwise it comes out too greasy.

1 butternut squash2 tablespoons olive oil2 cloves garlic, mincedsalt and ground black pepper to taste

Preheat oven to 400 degrees F (200 degrees C).Peel, deseed, and cut the butternut squash into 1 inch cubesCombine butternut squash with olive oil, garlic, salt, and pepper in a large bowl, preferably with a tight lid for the next step.Toss or mix everything so the squash is evenly coated in oil and seasonings.Arrange coated squash on a baking sheet, optionally covered with foil for easy cleaning.Roast in the preheated oven until squash is tender and lightly browned, 25 to 30 minutes.
