Roasted Butternut Squash

Tip: Don’t over do it on the olive oil, otherwise it comes out too greasy.


  • 1 butternut squash
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • salt and ground black pepper to taste


  • Preheat oven to 400 degrees F (200 degrees C).
  • Peel, deseed, and cut the butternut squash into 1 inch cubes
  • Combine butternut squash with olive oil, garlic, salt, and pepper in a large bowl, preferably with a tight lid for the next step.
  • Toss or mix everything so the squash is evenly coated in oil and seasonings.
  • Arrange coated squash on a baking sheet, optionally covered with foil for easy cleaning.
  • Roast in the preheated oven until squash is tender and lightly browned, 25 to 30 minutes.
