1 Tbsp canola oil2 chicken breasts, chopped into small cubes4 cloves garlic, minced1/2 sweet onion, chopped1/2 tsp salt1/4 tsp pepper1 carrot, shredded1/2 cup finely shredded cabbage3 green onions, thinly sliced1/4 cup cilantro, chopped1/3 cup sweet chili sauce (Mai-Ploy)1 heaping Tbsp crunchy peanut butter1/4 tsp freshly chopped ginger2 tsp soy sauceCrushed red pepper, to taste2-3 cups cooked rice

In a small bowl combine the sweet chili sauce, ginger, chunky peanut butter, and soy sauce, and crushed red pepper.Stir until smooth.Heat oil in a large skillet over medium.Add chicken, garlic, onions, salt and pepper and cook, stirring occasionally, until chicken is cooked through.
